The Brightside - A Raw Fish Recipe For Easy Entertaining

 With the festive season just around the corner, Chi is sharing his go-to party starter: raw fish, three delicious ways. Fresh, impressive and surprisingly fuss-free. This is your new summer 

entertaining ace.


Easy Party Starter Raw Fish

Ok, everyone loves a raw fish dish to start a party, how do I know? 
It’s the first thing people order when they go to a restaurant! But it’s really quite simple to make at home, all you need is a 5 ingredients formula. 

 Firstly, a word about the fish. Start by either catching it yourself or going to your fishmonger and telling them you’ll be serving it raw, then the party 
can start! 

Ingredients


Italian crudo 

 Fat - extra virgin olive oil 

 Acid - lemon 

 Salt - flaky sea salt 

 Bonus - chopped parsley Japanese style 


 Fat - sesame oil  

 Acid - orange Salt - soya sauce 

 Bonus - sliced spring onions Ceviche 


 Fat - avocado cubes 

 Acid - lime 

 Salt - fine sea salt 

 Bonus - red onion, chili & coriander finely chopped

 


Method


To cut the fish either ask your fishmonger again or do it one of 

these ways: 


- sliced thinly at a 45 degree angle (flatten the knife and cut down in a smooth motion). 

- Cubed by slicing into strips then down. 

- Straight down sashimi style.   


The formula: All you need is a fat, an acid, a salt and a bonus (and the fish) for a 5 ingredient sensation.




But truthfully you can do any combo using this formula! Get creative and it’ll all be delicious. Honestly it’s so simple and such a great way to blow away your guests give it a go.  As a rule of thumb 100g of fish per person is a great starter. Remember, go sparingly on your ingredients as you want to taste the fish and not overpower it. When slicing and cubing I find the thinner the better.
