The Brightside - Dreamy Overnight Breakfast Oats
This week on Brightside, Nutritionist and Naturopath, Shelly McKenzie (@shelleymckenzie_naturopath) shares her tips for fuss-free mornings. Make weekday mornings easier (and tastier!) with these chocolatey overnight oats.
Packed with protein, fibre, healthy fats, and even a sneaky zucchini, they keep little tummies full — and give busy mums a breather.


Protein Overnight Oats
Ingredients:
1 small Rokeby chocolate drink
Top up with almond milk to make 2 cups liquid in total
4 tbsp protein powder or collagen powder
1 peeled and grated zucchini (they won’t taste it, trust me)
2 tbsp chia seeds
2 tbsp hemp seeds (optional)
Method:
1. Add oats, protein or collagen powder, chia seeds and hemp seeds into a large jar or bowl.
2. Pour in the Rokeby chocolate drink.
3. Top up with almond milk until you reach 2 cups of liquid total.
3. Stir really well so the protein powder fully dissolves.
4. Fold through the grated zucchini.
5. Cover and refrigerate overnight (or at least 4 hours).
6. In the morning, give it a good stir and top with yoghurt, nut butter, berries or extra seeds if you like.
