Hot Cross Bunny Pancakes
Ingredients:
- 1/2 cup tapioca flour
- 1 cup milk (can substitute for coconut or almond milk)
- 1.5 tsp baking powder
- 1 tbsp maple syrup and extra for serving
- Sprinkle of spices (cinnamon, clove, coriander and nutmeg)
- Pinch salt
- Butter for frying and serving chocolate chips (optional)
Method:
2. Once well combined, mix through salt, spices and maple.
3. Heat one teaspoon of butter in a fry pan over medium heat. Add pancake mixture and cook until bubbles appear. Flip and continue cooking until golden on both sides.
4. To make hot cross buns, gently pour a cross onto the frying pan and leave for a minute or so until cooked through. Pour some additional mixture on top, and once it starts to bubble, flip for a few seconds until golden on both sides.
5. Add chocolate chips to the mixture in the pan for an added chocolatey treat. Serve warm with lashings of butter, maple syrup and fresh fruit.
