In celebration of World Teachers’ Day, Jane’s sharing her go-to White Chocolate & Pistachio Cookie recipe — the perfect homemade way to show a little love to the teachers who make every day brighter. Sweet, chewy and full of goodness, these cookies are a thoughtful (and delicious!) gift for the ones who go above and beyond.

White Chocolate
& Pistachio Cookies
Ingredients:
125g butter
150g sugar
1 egg
1 tbsp tapioca starch
80g pistachios
100g white chocolate
1/2 tsp bi carb soda
1/8 tsp salt
Method:
2) Take out a large bowl and add in the softened butter and sugar and beat with electric beaters until creamy
3) Crack in the egg and beat again
4) Add in the flour, bi carb soda, tapioca starch and salt and mix once more with
the beaters
5) Pour in the white choc chips and the pistachios and mix well
6) Take a spoon and roll out the mixture, flattening them down onto the baking tray
7) Bake in the oven for 14 minutes until only slightly golden brown.
