Take cooking off Mum’s to-do list this Mother’s Day with a slow cooked lamb shoulder by Tess Ford (@_tessford) It’s the kind of recipe that couldn’t be easier to make or more delicious to eat. Whether you’re cooking for your mum, a special lady in your life, or simply treating yourself, this slow cooked lamb shoulder is the ultimate Mother’s Day centrepiece.
Slow cooked lamb shoulder roast with crispy potatoes:
LAMB SHOULDER
INGREDIENTS:
2 kg Lamb Shoulder- Bone in
Four garlic cloves
Rosemary,
Thyme (dried or fresh)
Salt & pepper
Water
1 lemon
METHOD:
• Place lamb in a deep oven proof dish with a lid
• Pour in water so it comes halfway up the lamb
• Pierce the lamb and push in the garlic
• Season generously with rosemary, thyme, salt and pepper
• Cover and cook for 5 hours
• After 5 hours remove the lid, increase oven to 200°C with grill and cook for 20–30 minutes until crispy on top
• Remove from the oven and rest for 10 minutes before serving
• Spoon over the juices and squeeze over fresh lemon
CRISPY POTATOES
INGREDIENTS:
Potatoes, 1 per person plus a few extra for good measure!
Olive oil
Salt
Dried Oregano
METHOD:
• Start potatoes around 2 hours before the lamb is ready
• Cut into thick wedges, skin on
• Add to a pot and fill with cold water
• Boil from cold for around 25–30 minutes, until just starting to soften (check regularly so they’re don’t overcook)
• Drain and rough up the edges in the colander
• Place back in the pot and toss generously with olive oil, salt and oregano • Spread evenly on a lined tray
• Cook in oven 180°C fan forced with grill for 30 minutes
• Increase to 200°C and cook for 15 minutes more or until golden and crispy
Serve with a simple Greek salad - enjoy!
