For our latest Brightside, she shares with us one of her favourite lunchbox recipes to keep your child satisfied all day long.
Sushi Balls
Makes: 16 balls
Note: Recipe best eaten within two days of preparing
Ingredients:
Sushi rice:
- 2 cups sushi rice
- 3 cups water
Sushi Seasoning:
- 4 tbsp rice vinegar
- 1.5 tbsp honey
- 2 tsp salt
Filling:
- 1/3 cup mayonnaise of choice
- 30g finely chopped cheddar cheese
- 1/4 cup finely chopped spring onions
- Zest of 1/4 of a lemon
- 120g tinned mackerel
- 1/2 tsp nori seaweed flakes
Roughly 1/2 cup toasted sesame seeds for rolling
Method:
2. Add all of the filling ingredients to a separate bowl and mix together well until combined.
3. Once the rice is slightly warm, lightly wet your hands and roll the rice into 16 balls, roughly 50g each.
4. Next, take a ball, slightly flatten it and fill it with roughly one teaspoon of the filling. Then, cover it over with the rice and roll it back into the shape of a ball. Roll into the sesame seeds to coat.
5. Repeat this process until you have filled all of the balls and coated them all in the toasted sesame seeds.
