Nourishing Chocolate Easter Egg Baskets
A fun, balanced Easter treat for little tummies (and big ones too!)
I love letting my kids fully enjoy the magic of Easter — chocolate and all. But where I can add a little nourishment to help support blood sugar balance and fullness, I absolutely will. These chocolate egg baskets are the perfect mix of fun, crunch and nourishment.
Ingredients
2 tablespoons smooth peanut butter
½ cup soy protein crisps
125g mini Easter eggs, to decorate
Method
1. Melt the chocolate
Break the chocolate into pieces and place into a heatproof bowl. Sit the bowl over a small saucepan of gently simmering water (making sure the bowl doesn’t touch the water). Stir until fully melted and smooth.
2. Add nourishment
Stir through the peanut butter until well combined. This adds healthy fats and protein, helping to slow the release of sugar into the bloodstream and support more stable energy levels.
3. Add crunch + protein
Fold through the soy protein crisps. These give a delicious texture while boosting the protein content to help support growing bodies and fullness.
4. Create your baskets
Spoon the mixture onto a baking paper lined tray. Using the back of the spoon, gently shape into small nest or basket shapes, leaving a little space in the centre. Set Place in the fridge for around 30 minutes, or until firm.
5. Decorate + enjoy
Add mini Easter eggs to the centre of each basket before serving.
Storage
Store in an airtight container in the fridge for up to 1 week (if they last that long!).
Nutritionist tip:
Pairing chocolate with protein and healthy fats is a simple way to support blood sugar balance, energy and satiety — especially helpful during sugar-filled celebrations like Easter.
