Easy Peasy Pizza night is always a family favourite, especially when they're made at home so everyone can get involved.
The beauty of this recipe is that the pizza base is quick and easy to make whilst also being quite nutritious! A family-friendly and fun dinner for all!
Easy Peasy Pizzas
- 1 cup Greek yoghurt
- 2 cups self-raising flour
- 3/4 teaspoon salt
Toppings:
- Tomato paste
- Pesto
- Mozzarella
- Olives
- Ham
- Salami
- Capsicum
- Thinly sliced zucchini
Plus what ever else you like!
Method:
1. Add the Greek yoghurt, self-raising flour and salt to a mixing bowl. Start off by mixing with a spoon, then use your hands to combine the ingredients in a kneading style. It may feel dry at first, but it will come together. Once combined, roll into a ball and cover the bowl with a damp tea towel for 30 minutes.
2. Meanwhile, prepare your topping ingredients and preheat the oven to 200 °C. If you have a pizza stone, pop it in the oven while it's preheating. If you don't, line a baking tray with baking paper and leave it aside out of the oven.
3. After 30 minutes, divide the dough into six equal sized portions. Dust your benchtop with flour and using a rolling pin, roll each ball into a thin pizza base (roughly 20 cm diameter).
4. Spread the base with paste (tomato or pesto), evenly spread mozzarella on top, and then add your favourite toppings.
5. Transfer the pizza to your pizza stone/oven tray and cook for roughly eight minutes or until golden brown on the edges. Enjoy!
