Lemon and Coconut Bliss Balls

 Makes: 15

Note: These balls will keep in the fridge for up to seven days. Or freeze for up to one month.

  

Ingredients:


 - 2 cups raw cashews 

- 1 cup raw almonds 

- 15 fresh medjool dates, pitted 

- 1 tablespoon honey 

- 1 lemon, zest and juice 

- Small pinch of sea salt 

- 1 cup desiccated coconut

Method:


1. Add the cashews and almonds into a food processor and blitz until they resemble a fine ‘meal’ consistency. Add in dates and blitz again until the mixture starts to get sticky and a dough starts to form. 


2. Add the honey, lemon zest and juice and a pinch of salt and blitz again until well combined, sticky and the mixture holds together when squished together. 


3. Roll the mixture into 15 even-sized balls and roll in the desiccated coconut.
