Zesty Lemon Blitz Balls: 

A Perfect Wholesome Snack!

Are you looking for a refreshing and nutritious treat? These Lemon Blitz Balls are bursting with zesty lemon flavour and are incredibly easy to make with only five simple ingredients. These are perfect for a quick pick-me-up or a healthy snack option, and they’re sure to become a favourite in your household!

Ingredients:


- 1/2 cup cashews⁠ 

- 1/2 cup desiccated coconut⁠ 

- Lemon juice from 1 lemon⁠ 

- Lemon zest from 1 lemon⁠ 

- 2 tbsp maple syrup⁠ 

- More desiccated coconut for rolling⁠

Method:

1. Place all ingredients in a food processor. Process until all ingredients are combined and cashews are finely chopped⁠. 


2. Grab the desired-sized mixture and roll it into balls. Roll through desiccated coconut to finish⁠. 


3. Balls can be kept in the fridge or freezer if they last that long!⁠


Simple Vegan Apple and Sultana Muffins

Start your day off right with these easy and nutritious vegan apple and sultana muffins. Packed with juicy apples, sweet sultanas, and a hint of cinnamon, these muffins are perfect for a healthy breakfast or a tasty snack on the go! Enjoy these delicious muffins fresh out of the oven or save some for later—they’re sure to become a favourite in your household!

Ingredients:


- 2 cups plain flour 

- 1 tbsp baking powder 

- 2 tsp ground cinnamon 

- 2/3 cup brown sugar 

- 2 Granny Smith apples, cored, peeled, chopped 

- 3/4 cup sultanas 

- 1 banana 

- 1/2 cup vegan butter, melted 

- 200ml soy milk

Method:


1. In a large mixing bowl, sift in flour, baking powder, and cinnamon. Add brown sugar, apple, and sultanas; mix to combine. 


2. In a separate bowl, mash the banana until soft. Add melted butter and soy milk; mix to combine. 


3. Combine the wet mixture with the dry mixture, mixing until a batter forms. 


4. Spoon the mixture into a prepared muffin tray. 


5. Bake at 180°C for 20-25 minutes. Allow to cool before eating.
