Ingredients:
- 1/2 cup desiccated coconut
- Lemon juice from 1 lemon
- Lemon zest from 1 lemon
- 2 tbsp maple syrup
- More desiccated coconut for rolling
1. Place all ingredients in a food processor. Process until all ingredients are combined and cashews are finely chopped.
2. Grab the desired-sized mixture and roll it into balls. Roll through desiccated coconut to finish.
3. Balls can be kept in the fridge or freezer if they last that long!

- 200ml soy milk
Method:
2. In a separate bowl, mash the banana until soft. Add melted butter and soy milk; mix to combine.
3. Combine the wet mixture with the dry mixture, mixing until a batter forms.
4. Spoon the mixture into a prepared muffin tray.
5. Bake at 180°C for 20-25 minutes. Allow to cool before eating.
