Oat & Hemp Choc Bars

Here is another package-free snack to add to your repertoire. These oat and hemp seed bars are free from processed sugars, low GI, and are rich in omega 3’s. The kids will love the chocolate hit to satisfy their tastebuds.

Ingredients:

- 1/4 cup cacao nibs  

- 1 cup Medjool dates  

- 1 cup hemp milk (or milk of choice - I used oat) 

- 1 1/2 cups rolled oats  

- 3/4 tsp baking soda  

- 1/3 cup dark chocolate  

- 1/2 tsp salt  1 tbsp vanilla extract  

- 1/2 cup wheat flour  

- 1/4 cup coconut oil  

- 1 tbsp chia seeds 

- 1/3 cup hemp seeds



Method:

1. Preheat the oven to 160 degrees and line an 18 x 26cm tin with a silicone baking mat or paper. 


2. Place the dates, milk, chia seeds, vanilla extract, and melted coconut oil in the blender. Blitz until combined into a paste. 


3. Combine the dry ingredients—oats, baking soda, flour, hemp seeds, and salt—in a bowl and mix. 


4. Add the wet ingredients to the dry mixture and stir with a wooden spoon to combine. 


5. Chop the dark chocolate into small chunks. Add this and the cacao nibs to the mixture. 


6. Press the mixture down into a lined tin 18cm x 26cm. Ensure it is nice and snug and pressed as flat as possible to avoid the mixture crumbling.  


7. Bake in the oven for 20 minutes or until golden brown on top. Wait for the mixture to fully cool before slicing it into bars.
