Gingerbread Apple Loaf with Cherry Chia ‘Christmas’ Jam
This Gingerbread Apple Loaf is the perfect festive snack. A simple blender bread recipe to make life nice and easy this summer. It’s gluten-free, dairy-free and sweetened with a touch of maple. Delicious toasted with lashings of butter or served with the Cherry Chia ‘Christmas’ Jam.
Loaf ingredients:
- 1.5 cups almond meal
- 1 cup tapioca flour
- ⅓ cup almond butter
- ⅓ cup maple syrup
- ½ cup coconut milk
- 1 tsp baking powder
- 1 tsp bi-carb soda
- 1 tbsp apple cider vinegar
- 1.5 tbsp ginger, ground
- 1 tsp cinnamon
- ½ tsp cardamom
- ¼ tsp clove
- ¼ tsp nutmeg
Pinch of salt
2 small apples, peeled and cut into 1cm cubes

Jam ingredients:
- 1.5 tbsp chia seeds
- ¼ cup water
- 2 tbsp maple syrup
- 1 tsp orange rind
- ⅛ tsp (tiny sprinkle!) cinnamon, clove, cardamom and nutmeg

Method:
2. Combine all loaf ingredients except for the apples in a blender. Blitz until well combined.
3. Stir through apple cubes and transfer the mixture into the lined loaf tin.
4. Bake for 40 minutes, until golden and a knife comes out clean.
5. While the loaf is baking, combine all jam ingredients into a small saucepan. Let simmer on medium heat, stirring occasionally. It should take 10-15 minutes for cherries to break down and a nice thick jam to form. Transfer to a glass jar and let cool.
