Miso & Dark Chocolate Buckwheat Cookies
These delicious miso and dark chocolate buckwheat cookies are a delightful fusion of flavours. Not too sweet and slightly salty, the miso adds a subtle umami flavour, and the buckwheat provides a wholesome, nutty base with a fun little crunch. Perfect for sharing with friends, serving at a gathering, or enjoying in a quiet moment amongst the beautiful chaos that is this time of year!
Ingredients:
- 1 tbsp miso
- 1/2 cup coconut sugar
- 1 egg
- 1/4 cup activated buckinis (buckwheat kernels)
- 1 cup buckwheat flour
- 1/2 tsp bicarb soda
- 4 squares of dark chocolate, broken in half

Method:
2. Heat the butter in a small saucepan over medium heat until lightly browned.
3. Remove butter from the heat and whisk through miso.
4. Pour butter and miso into a heat-proof bowl and set aside to cool slightly.
5. Combine flour, buckinis and bicarb soda in a separate bowl.
6. Whisk coconut sugar and egg into butter miso and mix until smooth.
7. Fold the wet mixture into the dry mixture until well combined. Cover and refrigerate for 20 minutes.
8. Scoop mixture onto a lined tray using an ice cream scoop or spoon. This should make eight cookies.
9. Gently press each cookie down with a piece of dark chocolate.
10. Bake in the oven for 7-9 minutes until the edges are slightly golden. Let sit for five minutes.
