The Brightside: Midnight Muffins From Village For Mama
Midnight Muffins
A great savoury snack for any time of the day, but especially for those middle-of-the-night feeds. Another family favourite from the Village for Mama book and perfect for school lunchboxes.
This quick, easy recipe works well with any veggies - roast cauliflower, grated carrot or broccoli. You can use whatever fresh veg you have in your fridge, even chop up leftovers from last night’s dinner. Enjoy warmed in the oven or straight out of your Seed & Sprout lunch box!
Ingredients:
- 1 medium zucchini, grated
- 1 cup of veggies of your choice (broccoli, roast cauliflower, spinach)
- 1⁄2 cup herbs of your choice (parsley, basil, chives)
- 1⁄2 cup spelt flour
- 1 tsp baking powder (aluminium free)
- 3 eggs, lightly beaten
- A few kalamata olives, roughly chopped (optional)
- 2 tbsp coconut oil or ghee + 2 tsp for frying
- 2 tbsp pepitas (extra for topping)
- 1⁄4 cup grated cheese (optional)
Salt to taste

Method:
2. Heat ghee or oil in a frying pan and sauté leek until soft. Place in a large bowl.
3. Add veggies, herbs, flour, baking powder, pepitas and salt to the bowl.
4. Combine eggs and melted ghee/oil and then stir into vegetable mixture.
5. Spoon mixture into the lightly greased muffin tray and sprinkle with pepitas and cheese.
6. Bake in the oven for 20-25 minutes.
